Take-Out is Out of the Question

On your routine grocery-shopping trip, it’s a handy idea to pop something healthy and long-lived into your basket. Case-in-point: the delightful Delicata Squash, abundant in autumn and winter, is sturdy enough that you need not be in any hurry to consume it. Take it home, and let it roll around your counter until the end of one of those busy days, when a 10-minute meal is in order. When I did, here’s what resulted:

10 minute meal
Squash, White Bean and Caper Sautee.
Makes 3 cups

1 Delicata squash, peeled, seeded, and cut into ½ inch cubes
1 Tbsp olive oil
2 garlic cloves, minced
2 jarred roasted pepper, rinsed and chopped
1/2 can white beans, rinsed well
1 Tbsp capers, rinsed
1 Tbsp crushed pecans

Cook the squash in a microwave for 3 minutes, or until al dente. Heat a fry pan over medium-high heat, add oil and garlic, when you can smell the garlic, add the squash. Don’t shake the pan for the first minute. Add white beans and red pepper, and incorporate. Don’t shake the pan for another minute, then mix in capers and a 1/2 cup of water. Sauté until the water is absorbed and the dish is hot. Sprinkle with crushed pecans, and devour!
